Fresh Peach FroYo


Who's ready for another week? It's hard to believe it's already mid-September; it feels like time is flying by here. We have been busy bees at work, especially since students arrived last week. We enjoyed a date night Friday at a local tap room/brewery, which was a lot of fun! This weekend felt like things kicked off into high gear. I had an interview to be a volunteer at the local zoo, Point Defiance Zoo & Aquarium, then grabbed lunch before heading over to the Humane Society for my first volunteer shift! I got to hang out in the "cattery" washing dishes and litter boxes. It will be awhile before I can directly interact with the kitties that are waiting on their new families, but I can at least talk to them and show them some verbal love while I work. After volunteer activities were over, Will and I had a "treat yo self" moment and ventured to the mall for some new PNW-work clothes. We had so much fun, but are now poor haha. We hit it big-time at Old Navy and got a few things off our list that we were looking for. I'm also happy to report that I live super close to an H&M again, which makes my heart very happy. Will did not see the thrill as much as I did.

With Sunday morning came our weekly Spurs game, this time at 5:30 AM. We dragged ourselves out of bed to get to Doyle's in our new Spurs gear that we got with their sale/free shipping offer a couple weeks ago. I happily wore my new Spurple kit and Will wore his PNW-appropriate new Spurs thermal. We're happy to report that the Spurs won the game, despite looking a little rough on the pitch. We came home and napped before heading down the road to Downtown to Defiance, an event on the waterfront that the City of Tacoma put on. Since it was overcast and we were on the latter end of the event, there weren't a ton of people around, but we were able to get about 7 miles of running/walking in. We also learned about some upcoming races, which got us excited to start running again in earnest.

After spending the mid-day outside, we cleaned up and then headed up to Seattle to hang out with our friend Trevor and to see Seattle Reign FC, the professional women's soccer team, play in their play-off match against the Washington Spirit, the DC team. Trevor took us to the supercool, famous restaurant, Toulouse Petit, for a happy hour before the game. We enjoyed delicious cocktails and Southern-inspired gourmet small plates, including oysters, crawfish beignets, and shrimp gumbo. After gulping everything down, we wandered back to the stadium to grab decent seats before the game. Once the game kicked off, it was incredibly exciting! Reign dominated the game most of the time, with a good fight put up by the Spirit. It was still 0-0 at the half, which was nail-biting because no one wanted to go into overtime/PKs. Finally, with some strategic subs in the second half, Reign catapulted to a 3-0 win, with two of the subs scoring within a minute of getting on the field. The first goal was assisted by USWNT player Megan Rapinoe, to which she quickly followed up with her own goal for the second point. She was subbed off and the player that came on brought the score up to three. It was a heartbreaking loss for the Spirit who put up a strong fight, but it was exciting to be amongst the 5,000+ fans watching live in the stadium! Reign are now off to the finals in a few weeks in Portland, where they hope to cinch the title. They are currently undefeated at home and finished 1st place in the league season, so a championship title would be the perfect way to end the season. Did I mention how AWESOME it is to have a pro men's and women's soccer team where we live?!?!? It's beyond wonderful.


Now onto this recipe. I'll sum it up in one word: stellar. The perfect late summer treat, this light FroYo tastes like it's straight from the ice cream shop. The sweetness of the ripe peaches really is wonderful amongst the slight tartness of the yogurt, allowing for the perfect balance of flavor. The succulent peach fragrance emanates from your bowl as you delight in each bite slowly, to savor the creamy-goodness of this treat. Absolutely perfect as a palate-cleanser at the end of the day, you'll want to enjoy this for days to come. And with only four simple ingredients, you know that this treat is well-balanced and decently healthy to enjoy!


Notes: We used a little less yogurt and also chose to use Greek yogurt instead of just regular whole milk yogurt. We also blended everything at once instead of stirring the yogurt in separately. Otherwise, it's a simple recipe so we didn't change much else!



Fresh Peach FroYo (adapted from The Kitchn; serves 6-8)
3 large, ripe peaches, peeled and cut into chunks
1/2 cup sugar
Juice of 1/2 lemon
2 cups plain Greek yogurt

Put all ingredients in a food processor and puree. Transfer mixture to a large bowl, cover, and chill for at least an hour, preferably overnight. Once chilled, transfer to an ice cream maker and blend for 20-25 minutes. Store in an airtight container and enjoy!
