Cabbage & Chia Power Salad


Once upon a time, we had a bunch of random leftover items in our refrigerator. And when that happens, Will usually throws it together and hopes for the best. After unearthing some photos we realized that while this may not be the most exciting or 100% blog-worthy recipe, it sure was pretty and it can serve as an inspiration for when you have a bunch of stuff that needs to be thrown together. Sure, shredded cabbage isn't that thrilling, but you know what is? Sun-dried tomatoes. Also, chia seeds are the bomb dot com. So I can see where his inspiration for this "salad" came from. Mix it up on your own and definitely toss in some dressing, if you're feeling inspired by this one.

It's definitely been entertaining working backwards through old blogposts, trying to figure out what pictures correlate with what meals (sooooo many zucchini recipes in our food blog, draft and published) and doing our best to understand what the notes were about each recipe. For this one, I left myself this ingenious note:

Gee thanks, past Megan. Really helpful information when you know you're going to be writing about it two months later! Thankfully, the whole unearthing of old recipes hasn't involved as many shambles as this one and we can continue to chug along at a rapid-fire recipe-posting pace. Well, once I get around to narrowing down and editing over 500 photos of food....



Cabbage & Chia Power Salad (serves 2)
1/4 head of cabbage, shredded
1 cup couscous
1 tsp chia seeds
1/2 cup roasted, halved peanuts
2 tbsp sun-dried tomatoes
Optional dressing of your choice (not pictured)

To prepare, shred the cabbage (or other green of your choice, if cabbage is too bitter for your liking). Boil 1 cup of water; stir in couscous, then remove from heat, cover the pan with a lid and let sit for fives minutes before fluffing with a fork to serve. Chop up peanuts and sun-dried tomatoes. Make or shake up the salad dressing of your choice. Build cabbage to peanuts and enjoy!
