Fresh Fruit Trifle




Don't be fooled by the name - despite there being fruit, this recipe does not automatically qualify as "healthy." In fact, it's probably as far as possible from healthy, but it's delicious! I gathered this recipe from one of the innkeepers at Walnut Hill Bed & Breakfast from when my mother and I recently took a trip up to the Laurel Highlands in Pennsylvania. We spent the Fourth of July weekend looking at three Frank Lloyd Wright properties (including his famous Fallingwater) and stayed at this lovely B&B. Of course we got a delicious home-cooked breakfast both mornings, but this trifle was really a hit for the two of us. I don't usually ask my hosts at B&B's for recipes, rather just choosing to enjoy, but this was one of the better trifles I've ever had. You can imagine how shocked I was to discover how easy it was to make - it only involves three ingredients!






Upon receiving peaches and berries in our food subscription box this past week, I knew immediately that I needed to whip (yes, literally whip) this up for Will over the weekend. I figured it would work great as a dessert or a breakfast, but I thought it would be best to surprise him with it on Sunday morning. Needless to say, he loved it. There were lots of "mmmm's" happening and the words "I married the right woman" were uttered. I took that to mean he was satisfied by this ultra-simple yet heavenly little recipe. Thank you Jackie for sharing this one!! This would work wonderfully if you were having friends over and wanted a super summery dessert or a breakfast, for overnight guests. The colors from the fruit are vibrant against the white of the whipped cream cheese mixture, really popping against it's neutrality. Another fun aspect is if you have cute glasses to serve this in - I used our stackable wine glasses, but a Mason jar or water glass would work well to. And of course the recipe is versatile because you can select whatever fruit you want. Just make sure to keep it bite-sized, so cut down any larger fruits like watermelon, strawberries or peaches. Get creative and enjoy this satisfying summer recipe!




Fresh Fruit Trifle (serves 3)
8 oz. cream cheese
1/2 cup sugar
1 tsp vanilla
Fresh fruit

Whip together the three ingredients until the sugar is completely combined - you may want vary the speeds of your mixer to thoroughly whip it. Place in a covered container and chill overnight. Serve layered with fresh fruit like peaches, blueberries, blackberries, strawberries, etc.



You can also sprinkle a little cinnamon sugar on top, for extra sweetness!
