Sweet Potato & Kale Pizza

It's charming. Sometimes I'll take the time to edit pictures and type up recipes, but then leave the "dialogue" part of the blogpost blank. Or on occasion, I'll leave myself some notes in case I find myself typing up a post a month or so after we've made the food. And on certain occasions, that "note" I've left myself looks something like this:

"DELICIOUS!!!!"

These are the moments I shake my head and roll my eyes at myself. I mean seriously, how did I think that would be useful? Other than in this instance, it's 100% the truth and really the only way to describe this recipe. I think the multiple exclamation points appropriately portrays the enthusiasm I have for this meal.

Let's be honest - you all know how much we love making homemade pizzas. We've done fancy cheese and veggies pizzas, we've done pesto sauce pizzas, we've done Will's favorite kale pizza and my personal favorite caramelized onion pizza. So clearly we do this quite a bit. However, never in a million years did I imagine a sweet potato sauce would work on a pizza. Hel-lo amazing and healthy, to boot! This recipe made me appreciate our acceptance of sweet potatoes as a good veggie to cook with, now that we've morphed out of our "picky kid eaters" stages of life to the "try anything and everything at least once" years. Don't believe me? Try it yourselves. Oh and if you can, serve it with a fancy cider to get an extra bang for your buck.



Cooking Notes: Will chose to steam the kale before putting it on the pizza so that way it would turn out crispier. We also chose to omit the walnuts that the original recipe called for. You can also buy pre-made dough, but we love the quick go-to homemade recipe included below.

Sweet Potato & Kale Pizza (adapted from Self; serves 4-6)
1 medium sweet potato, peeled and cut into 1/2-inch cubes
1 1/2 tbsp olive oil, divided
1/8 tsp crushed red pepper flakes
1 serving homemade pizza dough
1 bunch curly kale, de-stemmed and torn into bite-sized pieces
1/4 cup crumbled goat cheese
2 tbsp shredded Parmesan

Prep your pizza dough to let rise for 45 minutes - 1 hour. While the dough rises, begin to prep the rest of the pizza.

Heat oven to 425 degrees. Boil a large pot of water and cook the sweet potato cubes in the water until tender (test with a fork), about 7-10 minutes. Remove from heat, drain and let cool for 5 minutes. In a food processor, pulse potato, 1 tbsp oil, red pepper and a pinch of salt until sauce is smooth. In a large frying pan with a lid, heat a drizzle of olive oil over medium heat. Toss in kale and a little water, then cover and steam for 5 minutes or until wilted. Remove from heat to cool before using on pizza.

Once dough is ready, roll it out on a pizza stone until 1/4 inch thick. Spread potato sauce evenly over the dough, then goat cheese, kale and Parmesan. Bake until crust is golden, about 10-15 minutes. Enjoy!
