Rosemary, Feta and Wild Rice

You know that feeling you get when you make a meal and know immediately that it's going to become a staple in your diet? That's what I felt with this dinner. Irresistibly simple, this dish can be modified in multiple ways and still turn out tasting great. It reminds me a lot of another meal we really love, our Mujaddara with Spiced Yogurt. Same simplicity, yet filling and flavorful. This one came from my favorite food blog, Pinch of Yum and was something I was able to make without a hint of doubt towards my abilities. What I also appreciated about this dinner was that it reminded me about wild rice! I haven't eaten a wild/brown rice combo in a long time. It's so weird-I know my mom used to have wild/brown rice as a side dish for dinner a lot when I was a kid, but I just haven't eaten it in what feels like forever. So needless to say, I have a rediscovered love of wild/brown rice!

This recipe also called for something completely new to us: Sel de Cuisine spice. Having no idea what that was, we googled it and found that it was a premade spice. Never fear though-we made our own "recipe" and I have included it below.We also had some Skillet Potatoes with dinner too, which were the perfect addition. Enjoy!

Cooking Notes: Instead of using goat cheese, we had some feta on hand so we used that. We also chose to use green beans instead of broccoli (although she says any veggie will work, which I agree with).

Rosemary, Feta and Wild Rice (adapted from Pinch of Yum; serves 2)
Fresh rosemary
Goat cheese (or feta)
Cooked wild and brown rice
Vegetable of choice (we used green beans)
Lemon zest and juice
Minced garlic
Sel de Cuisine
Honey

No need for specific amounts in this recipe-just mix and blend until you get it the way you want it!

At-Home Sel de Cuisine
Coarse sea salt
Tarragon Leaf
Crushed dried rosemary
Ground white pepper
Several cranks of black pepper
2 taps of cayenne pepper
1 tap of ground cinnamon
