Thanksgiving Day, Part 1: Breakfast of Champions

Welcome to my slew of Thanksgiving Day blog posts! I need to introduce you to the players, since there are more people than usual in the kitchen! Will and I have travelled to Arkansas to enjoy Thanksgiving with his parents, my mother, and Will's dogs. Will's mom is Betsy, my mother is Kay, Will's dad is Jim, and the two puppers are Lucy and Zoey. Will, Besty, Kay and myself are the ones primarily in the kitchen, but occasionally the puppers and Jim join us for the fun!

To begin, obviously on Thanksgiving, you can't stuff yourself with enough foods that are terrible for you! This is one of them. Betsy found this recipe on Pinterest and decided it would be the perfect thing to make for Thanksgiving breakfast. She even upped the ante by buying a massive package of organic bacon from Whole Foods that will probably travel to Florida for Christmas. It's amazing! Anyways, this breakfast is fairly simple and mostly just requires patience to wait long enough for the rolls to cook through enough!

Bacon Cinnamon Rolls (pictured above)
2 packages Cinnamon Rolls
10 strips of bacon

Fry the bacon for a few minutes on each side, until slightly crisp but flexible. Drain on paper towels.

Unroll cinnamon rolls, place a strip of bacon in each and roll back up (I recommend doing these one at a time). Place in a greased pan and bake for 10-15 minutes. If the ones in the middle of the pan are still gooey, stick them back in the oven while you enjoy the ones on the outside that have crisped up more! And don't forget to drizzle them with the icing before enjoying!

Cooking Notes for Eggs: I forgot to take a picture because we were so excited about the cinnamon rolls, so sorry about that. But they look like scrambled eggs, so you know what that looks like. The cinnamon rolls were much more exciting anyways.

Scrambled Eggs with Feta
8 eggs
1/4 cup crumbled feta cheese
1 tsp white pepper
1 tsp dried basil
A smidge of olive oil

Warm skillet with a drizzle of olive oil. Crack eggs in a separate bowl and whisk well. Add spices and continue to whisk. Pour into warmed skillet and begin to scramble. Once eggs are almost set, add feta. Keep warm until ready to serve!
