Marble Bread

I found this recipe on my new favorite cooking blog, Pinch of Yum. I actually found this blog when Googling how to take better food pictures. This woman is amazing for so many reasons! She is kind enough to post all the ins and outs of having a successful food blog and inspired many of the clean-ups and changes to my blog over the last week, which you are now viewing. (Beth at Budget Bytes was also kind enough to answer some questions via Facebook since she also runs a Google Blogspot blog). So I figured, if this woman is awesome enough to have all this advice, her recipes must be pretty good to. This is the first one that caught my eye.

This is the perfect little breakfast loaf! Even though it looks complicated, it's simple to make and delightful to eat! A sweet little treat with your morning coffee. It's not overly sugary and has a bread-like consistency, which makes it feel fulfilling and less like you're eating leftover birthday cake for breakfast.

Chocolate Sweet Cream Marble Loaf (adapted from Pinch of Yum; serves 8)
1 1/4 cup flour
1/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp vanilla
1/2 cup sugar
1/2 can sweetened condensed milk
1/3 cup milk
1 beaten egg
1/3 cup melted butter
1 tbsp cocoa powder

Preheat oven to 325 degrees. Grease a loaf pan with nonstick spray (or Crisco). Gently combine the flour, baking soda, baking powder, salt, and sugar together in a medium bowl. Add the vanilla, sweetened condensed milk, milk, egg, and melted butter. Stir until combined. Pour the batter into the loaf pan, reserving about 1/2 cup of the batter.

Mix the cocoa powder with the remaining 1/2 cup of batter and stir until combined. Pour the chocolate batter over the regular batter and marble with the tip of a knife, making 's' motions throughout the batter until the two batters are swirled together in a nice pattern. Bake for 35-40 minutes (mine took 50) or until a toothpick comes out clean. Serve with coffee for a less-than-healthy breakfast :)
