This is Will's wonderful alfredo sauce recipe. This was one of the first things he ever cooked for me, so you can see why I fell in love with the guy. However, in the off chance you want Mama June's "Sketti" recipe instead, look no further. I've never watched Honey Boo Boo, but Will and I were just dying of curiosity when we both came across this video on our respective trashy websites (People and The Daily What). I give you, Sketti. And just remember folks, once you watch this, you can never take it back.
Will's Alfredo (with pesto!)
1 tbsp
1 tbsp flour
1/2 cup milk
1 tsp nutmeg
1 tsp salt
1/4 tsp ground white pepper
Fresh ground pepper
1/2 cup Parmesan cheese
8 oz. pasta of your choice (we used penne for this version)
Prepare pesto.* Boil water and start cooking pasta. Once pasta has started, in a separate pan melt butter and mix in flour, allowing to sizzle but not burn. Add milk, whisk, and allow that to come to a simmer. Add spices to permeate milk mixture, continuing to simmer. Allow to thicken, then add cheese. Once cheese melts, add pesto, stirring until combined. Drain pasta and pour alfredo sauce over it. Best served with garlic bread or veggies.
*Will's Basil-Parsley Pesto
1 tbsp olive oil
1 clove garlic
2 tsp pine nuts
Salt & pepper, to taste
Handful of fresh basil leaves
Handful of fresh parsley
Toast pine nuts on stovetop until lightly browned. Mix with other ingredients in food processor until blended.
