If you're looking for a meal that you can make in less than 15 minutes and can pack a flavor punch, look no further. This one probably cost less than $5 to make (we only needed the noodles and the green onions for this meal and others this week) and came from good ol' Budget Bytes, who by the way, will be creating a cookbook soon which is UBER-EXCITING! We doubled the recipe to serve four and substituted basil for cilantro, so if you want the original recipe, just click on the link!
Dragon Noodles (adapted from Budget Bytes; serves 2)
8 oz. lo mein noodles
3 tbsp butter
1/4 tsp crushed red pepper
2 eggs
2 tbsp brown sugar
2 tbsp soy sauce
a large squirt of sriracha (and you can add more to your personal bowl)
2 green onions
A handful of fresh basil leaves
Cook noodles according to package. While noodles are cooking, prepare sauce by mixing brown sugar, soy sauce and sriracha. When noodles are done, drain and set aside.
Melt butter in a large sauce pan over medium-low heat. While butter melts, add crushed red pepper to pan. In a separate bowl, gently whisk the 2 eggs in preparation. When butter is completely melted, add eggs to pan and gently stir. When eggs are done, turn heat to low.
Add noodles to pan with egg mixture, then add the sauce. Mix together and toss in green onions and basil. Continue mixing until moisture is gone and the sauce covers everything. Enjoy!
