Brown Sugar Peaches with Ice Cream

Will and I started going to a Farmer's Market about a month ago and I've got to say, it's really transformed our cooking lives. With the option to buy food that has been locally grown by farmers from Florida and Georgia, it's just too good to pass up. We even bought a cookbook that has recipes based on foods by season. When you live in North Florida and are about 30 minutes from the Georgia border, you get spoiled by these little delights called Georgia peaches. And man do they get better by the week! I was never a peach person until a couple years ago and I have to say, I am thankful that I started eating them so I could enjoy recipes like this one! This is just a simple way to enjoy your (Georgia) peaches as a dessert.

Brown Sugar Peaches with Ice Cream (adapted from Williams-Sonoma; serves 2)
4 peaches
1 tbsp of lemon juice 
4 tbs (1/2 stick) unsalted butter
1/4 cup firmly packed light brown sugar
2 tbsp dark rum (optional-we've never tried this but we will someday!)
1 pint vanilla or whatever flavor ice cream

Halve and pit the peaches, then cut them into 1/2 thick slices. In a nonreactive bowl, toss together with lemon juice and set aside.

In a large fry pan over medium heat, melt the butter. Add the peaches and brown sugar and saute the peaches until they are lightly browned and the sugar has caramelized, approximately 5 minutes. (Remove from heat and swirl in rum, if using this option).

Serve over ice cream and enjoy!
