Oreo Stuffed Brownies

If you want to have a heart attack and die, then this recipe is for you. I've got a newfound love of Pinterest (what 20-something girl doesn't?) and one Saturday night Will and I were feeling like splurging on something really unhealthy. We came up with this as a result:

These are brownies with Oreos in them. Yup, you heard and saw correctly. We chose mint Oreos and a pack of Ghirardelli brownies (that apparently had dark chocolate chips in them). Like I said, we were feeling bad. The recipe itself was fairly simple. Make brownies, scoop some mixture into a muffin tin, put an Oreo in, and plop some more mixture on top. Bake and voila! Heaven.

Cooking Notes: The only issue with this was despite spraying the tin with cooking spray, the brownie concoctions still stuck to the tins. However, what we dug out, we put in a bowl and let vanilla ice cream melt over top of them-it just saved us a step from having to slice up a spoonful in the bowl!

Oreo Stuffed Brownies (adapted from A Hen's Nest; yields 1 dozen brownies)
1 box of brownie mix (plus ingredients)
1 bag of Oreos

Preheat oven to 350 degrees. Mix up the brownie batter according to the directions on the box. Spray muffin tins generously with non-stick spray. Dip each Oreo cookie into the brownie batter, being sure to completely coat each cookie. Place the dipped Oreo in the bottom of a muffin cup. Once all cookies have been prepared, use leftover batter to pour evenly over each muffin cup with an Oreo. Bake in oven 10-12 minutes, until barely set, helping to remain gooey. Let cool briefly before enjoying!
