Campfire Breakfast Bake


A few weeks ago, we had the great pleasure of going on a camping trip with my best friend and her boyfriend, in the Shenandoah (pre-government shutdown). The trip had originally been planned to celebrate her birthday, but ultimately ended up celebrating much much more. Not only had my bestie scored a great new job that week, but to her surprise, her boyfriend proposed the first night they were camping! He even made her a beautiful wood ring engraved with silver (he's a blacksmith) with a special message for her :) Will and I went up on Friday and spent the evening celebrating with them, which definitely included the consumption of lots of libations. So what better to have the next day than a huge dutch oven full of tasty breakfast food, cooked over a campfire? Not much is really better than that, particularly if it's a cold, rainy mountain morning like we had.

What's great about this recipe is that it can be adapted for a normal dutch oven, inside your nice warm, cozy kitchen. Nothing changes the way it cooks other than it's not over a campfire and is inside.* It may not quite give the same smoky flavor, but I would imagine it would be equally as good. Basically what this recipe ended up doing was taking all your favorite parts of breakfast (biscuits, sausage, etc.) and combining it in one big pot, making it easier to manage to eat instead of having to fork only one thing at a time.

I will admit, any attempts at measuring things went out the window, because let's be honest--we were camping. So the approximations here may not be entirely 100% accurate to the final product, so feel free to mess around as you please. Also, this could be adapted for a smaller group of people, in a smaller baking vessel. It's completely up to you! But the concept of throwing it all together is what really sticks with this one and makes it worth sharing! And eating!

Jesse's Campfire Breakfast Bake (serves 4 very hungry campers)
1 lb. breakfast sausage
A splash of milk
8 eggs
2-3 tbsp butter
1/2 packet of blended cheddar cheese, or as much as you want
Sliced onions & peppers (optional)

Begin by melting butter in a dutch oven, to create grease. While butter is melting, in a separate bowl, mix the eggs with a splash of milk, until well combined. Place sausage on the bottom of the pot, then line top with biscuits. Pour egg/milk mixture over top and sprinkle on as much cheese as you'd like. Allow to bake for 15-20 minutes, checking at the 15 minute mark, until sausage and eggs are cooked. Serve by scooping out a biscuit and all the goodies underneath it. Enjoy!

*Indoor approximations have not been tested yet. If you do make this, please leave a comment about what you did to adapt it to indoor conditions!
