Cooking Notes: I used 1 tbsp brown sugar (because I needed to get rid of it), 1.5 tbsp white sugar, 2 tsp cinnamon for the topping. Otherwise, I mostly followed the instructions.
2 2/3 cups all-purpose flour
2 tsp baking powder
1 tsp salt
2 cups packed brown sugar, plus 1 tbsp
1 cup butter, at room temperature
2 eggs
1 tbsp vanilla
1 1/2 tbsp white sugar
2 tsp ground cinnamon
Preheat oven to 350 degrees. Lightly grease a 9x13 baking pan. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In a large mixing bowl, beat together butter, 2 cups brown sugar, eggs, and vanilla, until smooth. Slowly add the flour mixture to the egg mixture, continuing to beat until well blended. Spread the batter evenly into the prepared pan.
In a small bowl, combine 1 tbsp brown sugar, the white sugar, and cinnamon. Sprinkle the mixture evenly over the batter in the baking pan. Bake for 25-30 minutes, or until the surface springs back when gently pressed. Remove from oven and let cool slightly on a wire rack. While still warm, cut into squares. Serve and enjoy!
