Wasa Lunches

Will has been on a kick recently of making "Wasa lunches" because of a suggestion he saw on Buzzfeed. Up until a few weeks ago, we hadn't really ever heard of a Wasa cracker. However, after exploring Buzzfeed's post about the Wasa lunches, Will was sold and I'm always game to try whatever he suggests for meals. Thus began our Wasa lunch journey.

So far, we have done three weeks worth of Wasa lunches. The first week (pictured below) was our hummus/veggie week. Then last week we did cottage cheese with fresh pineapple. This week was peanut butter and apples (yum!). The possibilities with this lunch are truly endless because all you need is a Wasa cracker, something spreadable, and a fruit or veggie on top! The Wasa crackers themselves are full of nutritional value and definitely fill you up more than say, a Ritz cracker, would. Plus, their rectangular shape allows for a nice palette upon which to construct creative lunches!

Hummus, Carrot, and Cucumber Wasa Lunch (from Buzzfeed)
1 large cucumber
2-3 large carrots
Homemade hummus
3 Wasa crackers per lunch

Shave the cucumber into thin slices. Shave the carrot into thin pieces. Make the hummus or buy some. Spread hummus on Wasa cracker, then layer carrot and cucumber on top. Enjoy!
